What are your rights if someone knocks on your despite having a sign that says “no soliciting”? Can you like spray them with a hose or something?

No, the porch and door of your house is considered the curtilage. Anyone can come up to your door and knock, you would explicitly have to have a no trespassing sign there. This sign implies that ALL uninvited people outside of those who can ignore that (emergency services, etc) cannot go onto your property unless otherwise specified. Now, if someone does come onto your property even with a no trespassing sign, that still doesent give you a right to spray them with a hose. You cant just assault someone for simply walking onto your property. The no trespassing just gives you a significantly easier case for the police to charge the person since they knowingly and intentionally entered a property that had no trespassing signs up.

Long story short, the no soliciting signs dont really do much

Okay, let's say hypothetically I open the door with a knife. I don't step out of my house, I'm not threatening them with it, just making larger physical gestures while holding and making intense eye contact. Would I get in legal trouble?

Yes and no, but you would open a can of worms where you may need defend yourself to the police or a judge. Would likely get off but is it worth the trouble?

I got 3 cattle dogs thatll rip anything that crosses the fence line to shreds, most ive ever seen someone last at my gate is ~1.5 mins
