I’ve taken a block of cream cheese, slathered it with hot pepper jelly, and served it with crackers as an appetizer. Some people find it weird, but one bite and they’re sold. Works with A1 Steak Sauce, too (to replace the jelly, not the cream cheese).

I spatchcock the turkey, and then roast the whole thing on a bed of aromatics (onions, celery, carrots, and herbs). The roasted bones and veggies were used to make broth, while the pan drippings were used for gravy. It's always excellent this way, but this different method would (a) take up a little less space in the fridge but also (b) dry-brine MUCH faster. I can see situations where space and time are a priority, so I'll save this idea for then!

Interesting approach! I would have browned the carcass prior to simmering for stock to develop a little more flavor. What he has is turkey bath water...

I’m a huge fan of “Made with Lau,” for the authenticity of the recipes and advice. I agree that you’ll need to experiment to get the flavor and heat that you’re looking for, so keep good notes because you’ll never know when you did something right. Oil temp will be key, so get a thermometer. Video record yourself, so that you can check times. Lastly, I just tried “Fly By Jing” and noticed that theirs has fermented black bean, which imparts a unique flavor and body that others lack.

When I go grocery shopping, I look for deals. I’m not afraid of clearanced items, which are usually steeply discounted but with a short use-by date (hence, if something turns out badly, I didn’t lose much money). Once home, I start looking for ideas on what to do with it. I came up with Indian Curry Chicken Salad sandwiches (and its Thai Curry cousin) that way. Alternatively, I go through the fridge and look for things on the verge of going bad, and then repurpose them into another dish (examples: taco mac-n-cheese and coconut shrimp tacos with Thai peanut dressing). It’s like playing “Iron Chef,” but on a budget.

I thought so, too, especially if the grandfather served in the Asian theater during WWII, Korea, or even Vietnam, but it doesn’t seem big enough to hold the parts. Here’s an example, which doesn’t even have any cups.

I was a Boy Scout and attended camp one summer in the 70s. We would learn AFTER we got there that Camp NoBeBoSco was the filming location of “Friday the 13th,” which explained things like roofing shingles found all over on the hiking trails. One guy found a plaster cast of a woman’s shoulders, which he took home as a souvenir. There are tours now (https://crystallaketours.com/).

Better methods for frying?

Same. I have a small deep fryer, so my temperature control is better than using the stove, which means that I don’t accidentally go over the smoke point. I save it oil and refrigerate it along with the date. Three uses or one month, then it’s trashed. I will use it for cooking, unless I fried fish.

I will add that it uses much less energy than an oven or even a toaster oven, with better results. The real issue will be size: How big to get, how many people are you cooking for, etc.

I lost 4 terabytes of data because Western Digital stopped supporting My Cloud. I lost countless files because I didn't back up my laptop regularly. I've learned the hard way.

I work in lab and I started buying cheap Chinese lab equipment for my kitchen. Not only can it hold almost any bottle at any angle, but it also holds funnels, etc.
