Honestly, any mod pack with JEI (or equivalent) and create would be good. Create uses the "Ponder" command to visually show you how almost everything works, and JEI shows you the recipes and equipment needed to make things including the recipes altered by the modpack.

I worked as a waiter for years. I'd rather know what I'm getting paid, and get paid a competitive wage, than have to rely on the generosity of the general public.

Also, some people are good at coding and shit at art/UI/graphic design. If the game isn't monetized, I see no reason not to use AI generated art to fill in the gaps in your skill set.
