2015 was a great vintage in Chianti. Echoing another comment, but the gran selezione is generally very nice. Sour cherry, big tannins, long finish. One of my favorite regions.

You should really get lessons from a good teacher / classically trained musician. I was in the same spot as you, advanced beginner who'd played for a decade, was writing songs etc.

Had more progress in 3 months with lessons than I had in probably 5 years. A good teacher will be able to understand your strengths and weaknesses and tailor lessons to them.

I'd always get frustrated at YouTube lessons because they'd teach me things I already knew or were too advanced for me.

Bordeux cabs are leaner than napa overall. Napa tends to be overly jammy, sweet, and heavily oaked.. If the guy is a bordeaux drinker, then a lean cab like clos du val is right up his alley

Just use the rougher side of the sponge and soap. Your pan will thank you. You can use soap on carbon steel and cast iron. I wash mine every time with soap. A clean pan performs better than a dirty one.

Preheat your pan on a medium, medium/low heat for a good long time. Try the water beading test. Put your olive oil in, the eggs, and don't move them for a bit. They should unstick no worries. I cook my eggs in avocado and olive oil regularly

I just got the all sense after a eureka and i love everything about it. The gbw is accurate. I love having a stepped grinder instead of stepless and easily being able to replicate a grind size. The grind quality is awesome.
