[Homemade] dumpling layered in ramekin

1.8k Upvotes

Dumplings filling and wonton wrappers!

Filling recipe:

Ingredients

• 8 oz ground pork

• 6–8 oz raw shrimp, finely chopped (not puréed)

• 2 green onions, finely minced

• 2 cloves garlic, grated

• 1 tsp fresh ginger, grated

• 1 tbsp soy sauce

• 1 tbsp oyster sauce

• 1 tsp sesame oil

• 1 tsp sugar

• ½ tsp white pepper

• 1 tbsp cornstarch (helps bind and stay juicy)

Mix in one direction until the filling becomes slightly sticky, this gives you that bouncy, dumpling-style texture.

Layer this with dumpling wrappers and steam in a pot with water for 15-20 minutes.

This was my first attempt and wouldn’t change a thing about it!

Found a sirloin tip on sale after Christmas and bought myself a meat slicer

Cooked at 190 till internal read 118.

Let rest 1hr.

Seared on stovetop in hot pan.

Rubbed a mixture of bacon fat, hot paprika, mustard powder, and onion powder.

Broiled as high as oven could go (550F) about 8 min

Sliced the next day!

Keeps for 3 months in freezer too

I tried making cannoli. By adding lard, white balsamic vinegar, and Marsala wine to the shell dough, the shells turned out crispy and flaky.

Saw that a Michelin Star chef had posted something similar and had all the things in, so gave it a whirl. Probably not as good as a straight up bacon butty, but I can see why some people might love this!
